Bacon wrapped Garlic and Basil Chicken in White Wine Sauce

Juicy garlic and basil marinated chicken, wrapped up in bacon, with a low calorie sauce to go with it. You can't go wrong with that 😉

Ingredients
2.20 lbs Chicken tenders
8 Bacon
Marinade
½ Lemon, juiced
¾ cup White wine
2 tbsp Garlic, pressed
2 tbsp Basil, muddled
Salt and pepper to taste
Sauce
1 tbsp Arrowroot
¾ cup White wine
1 cup Chicken broth
½ Lemon, juice and zest

 

Marinade the Chicken

Clean the chicken and set aside.

In a plastic bag (or a bowl) mix the ingredients for the marinade.

Mix in the chicken.

Tie off bag (or cover bowl with plastic wrap) and put in fridge for at least an hour.
You can easily prepare up to here the day before.

Prepare the sauce

Put the arrowroot in a sauce pan.

Slowly add some of the chicken stock and stir vigorously until the arrowroot is fully mixed in.
Add the rest of the chicken stock.

Add the wine and let it boil.
Stir frequently.

When it has reduced to about half, add the lemon juice.

Bake the Chicken

Cut the bacon slices in two and wrap each of the tenders diagonally with a bacon half.

Place the bacon wrapped tender in an oven safe form.

Pour over the sauce, and bake at 400ºF (200ºC) for 20-25min.

Sprinkle the zest on top before serving.
Serve with rice.
