Delicious juicy cauliflower gratin for all cheese lovers. Can easily be made vegetarian by skipping the bacon.
Split up the cauliflower head into small bouquets.
Melt the butter and gently add the flour while stirring.
Add the cream and let simmer until thickened.
Stir in the gratin cheese.
Cover a buttered oven safe form with the cauliflower bouquets.
Pour over the cheese sauce and sprinkle the chevrè and parmesan on top.
Put in oven at 225ºC (437ºF) for ~25min.
Shred the bacon, and cook in a dry pan.
Let it rest on a paper towel to drain the grease.
Sprinkle bacon and parsley on top of the gratin when done.
