Toast the sesame in a small pan over medium heat until lightly brown.
Wash the arugula. Set aside to let dry while preparing the rest.
Slice the cumber and avocado, and tear up the salmon into slices. Set aside.
Squeeze the lime juice into a bowl and whisk with the olive oil and half of the sesame seeds until it emulsifies.
Mix ingredients and dressing in a bowl.
Scatter remaining sesame seeds when serving.
